Shaskshuka – Eggs poached in tomato sauce, is a very tasty Tunisian cuisine that is healthy, easy to prepare, full of flavour and is beautiful to behold because of the wonderful colours.. It is usually served for breakfast and brunch. But it is definitely something yummy and easy on lazy weekends. This dish is best served with some baguette. I have added some dry fish to the cuisine which makes the Shakshuka taste even more yummy. It is a must try recipe.

Ingredients:
4 eggs
2 cloves garlic
1 green pepper
2 medium large tomatoes
400 ml boiled water
4 tablespoon olive oil
1.5 tablespoon tomato pasta
1.5 tablespoon harissa
1 large onion
Salt to taste
Some dry fish
Some coriander
Spices of your choice
Directions:
1. Chop the onion, dice green pepper and tomatoes. slice the garlic cloves.
2. Heat the olive oil in a frying pan. Add chopped onion and diced green pepper, sauté for about 6-7 minutes over medium heat.
3. Add harissa, tomato pasta and the chopped garlic and sauté for 4-5 minutes more.
4. Add the other spices, salt to taste and dry fish. Cook for 3 minutes
3. Add 1/2 cup water (if needed add more). Stir well
4. Cook for ca. 7 minutes over low-medium heat.
5. Create 4 “wells” (less or more depending on how much eggs you intend to use) in the tomato mixture. Crack an egg into each “well”. Cook until the egg whites are set.
6. Garnish with fresh parsley or coriander and serve with baguette.
