I have made the tastiest Jollof rice ever using my own method and ways. Check my easy recipes. The beef, the chicken and the gizzard were pre-fried. The broth in the video is from the chicken and beef! Total cooking time ca. 60 minutes.
Ingredients for 4 people:
250g cooking oil
1 onion
500g tomato puree
Spices of choice
250g fried beef
250g fried chicken
100g fried chicken gizzard (optional)
1 litre broth
3 cups prewashed long-grain rice
200g green peas
1 green bell pepper
1 red bell pepper
1 yellow bell pepper
Slightly bake 1 sliced onion in a warm cooking oil. Add tomato puree and stir. Add spices of choice and stir. Cook for 3 minutes in medium heat. Add the fried beef and chicken and the optional chicken gizzard. Cook for 3 minutes in medium heat. Add 1 litre of broth. Add 3 cups prewashed long-grain rice. Spread the rice evenly in the cooking pan. Cover and cook in low heat for 8 minutes. Add 200g of green peas and sliced red, yellow and green bell pepper. Stir, cover and let is simmer for 10 minutes.
