Moin-moin is a steamed or boiled bean pudding made from a mixture of washed and peeled beans and onions, fresh red peppers, spices, and often fish, eggs, and/or crayfish. It is a protein-rich Yoruba food that is commonly eaten across West Africa.
140 g of peeled black eyed beans
100g of shrimps
35g of chicken gizzard
2 hard boiled eggs
40g of broth (optional)
2 tablespoons of palm oil
Different spices
Salt to taste
How to prepare:
Blend the peeled beans and add the broth to make the blending smoother. (You can substitute the broth with water)
Add some broth or water to the finely blended beans and stir.
Add salt to taste.
Add 2 tablespoons of palm oil and the shrimps.
Stir, add your spices of choice.
Optionally add spicy pepper for the tropical taste.
Add the chicken gizzard. (Feel free to use other small fillers like crayfish, meat, fish etc.)
Evenly divide the blended beans into heat proof containers.
Add the sliced, boiled eggs.
Place the heat proof containers in a cooking pan and add some water.
(Make sure the water covers just about a 3rd of the pan)
Steam up on medium high heat for about 10 minutes.
Voila. Your delicious Moin Moin is ready for you to taste.
