Dodo is a Nigerian word for fried plantain. Combined with spicy beef sauce, it becomes Beef-Dodo. As you can guess, there are many variations of this recipe. There is Chicken-Dodo, Pork-Dodo. The most popular one of course being GizDodo. GizDodo is the variation made with gizzards. Check out the recipe here: https://youtu.be/s-p_F9sFaDQ
Beef-dodo can be served as a side dish which can be paired with rice or with potatoes, baguette, even with Ugali, Fufu, Banku, Sadza etc.

Fry the chopped plantains in the vegetable oil till golden brown and set aside.
Use the same oil and fry the beef ever so gently.
Add the tomato puree and let it simmer for 5 minutes in medium heat.
