Delicious Beef Dodo Recipe | Afropean Kitchen

Dodo is a Nigerian word for fried plantain. Combined with spicy beef sauce, it becomes Beef-Dodo. As you can guess, there are many variations of this recipe. There is Chicken-Dodo, Pork-Dodo. Beef-dodo can be served as a side dish which can be paired with rice or with potatoes, baguette, even with Ugali, Fufu, Banku, Sadza etc.

Ingredients:
1 kg beef (diced)
3 ripe plantains
1 tomato puree
3 medium sized Carrots
1 green bell pepper
1 yellow bell pepper
2 small onions
200 gram green peas
Salt to taste
Seasoning of choice
1 cup of vegetable oil

Method:
Wash the beef, marinate with the onions, salt and various seasoning of choice.
Cook till tender and set aside.
Fry the chopped plantains in the vegetable oil till golden brown and set aside.
Use the same oil and fry the beef ever so gently.
Add the tomato puree and let it simmer for 5 minutes in medium heat.
Add the chopped carrots, green and yellow bell peppers. Let it simmer for 5 minutes.
Add some seasoning of choice.
Add the green peas and simmer for 2 minutes.
Add the fried plantain. Stir, reduce the heat to low and let it simmer for 3 minutes.
Voilà, your BeefDodo is ready!
Serve with rice (which is my favourite) or with potatoes, baguette, or even with Ugali, Fufu, Banku, Sadza etc. Bon appetit!
