Baghrir is a special type of pancake with a thousand holes that is a popular delicacy in Morocco. Baghrir is usually eaten in the afternoon, at breakfast or during a party. Like pancakes, Baghrir is topped with honey, granulated sugar or even butter to taste.
Ingredients:
250 gr. fine semolina
150 gr. flour
1 packet of vanilla-flavoured sugar
1 tablespoon dried yeast
1 teaspoon salt
2 sachets of baking powder
500 ml of lukewarm water
60 ml extra lukewarm water
Garnish:
- honey
- olive oil
- granulated sugar
Preparation:
Step 1.
Sieve the semolina, flour, dried yeast, baking powder, vanilla sugar and the salt over a bowl. Stir the dry ingredients together.
Step 2.
Pour in half of the lukewarm water and mix it together with a blender. Pour in the remaining water and mix it together again into a liquid batter.
Step 3.
Cover the bowl with plastic wrap and a kitchen napkin and let the batter rise in a warm place for 60 minutes.
Step 4.
Pour in the extra water, 60 ml after proofing and stir it. Heat the frying pan over medium heat, spoon a full ladle of batter into the frying pan and fry the Baghir on one side until the bottom is nicely golden brown and holes have formed on the top. You do not have to turn the Baghrir. This is because the heat will rise through the holes and the top will be well done.
Step 5.
Place the baked Baghrir on a plate and cover it with a napkin so that it stays nice, warm and soft. Serve the Baghrir with honey.
