Lookdam rice is something I invented. This meal derives its name from the 2 places I was supposed to be on the day this delicious meal was created! I was supposed to go to either Kijkduin (which is a beach in The Netherlands) or De Dam (which is a popular square in Amsterdam). \u201cKijk\u201d is the Dutch word for \u201clook\u201d in English! So I added &#8220;look&#8221; to &#8220;dam&#8221; and the name was born! I had time in my hands so I decided to experiment. I am not a born cook. I actually leaned to cook at an old age but this is the first time I decided to be creative in the kitchen. I am glad I did! It looks from afar like the popular Jollof rice of West Africa but the Jollof rice purists would have been tough on me if I had called this Jollof rice! It isn&#8217;t. It is Lookdam!
